Skinny lemon & garlic chicken salad

So my housemate Kazzy (Klarissa) and I often make dinner together and tonight was no different. We're both in the process of working towards our beach bods so we limited our carbs to yummy cracked black pepper croutons. We made a really amazing chicken salad so thought I'd share the recipe.




Ingredients:
1oz salad cheese we used apetina but feta or even goats cheese would work just as well
Chicken breasts (1 for each person)
Salad leaves (we used half lambs lettuce, half crunchy lettuce)
Handful of tomatoes
1 large red pepper
1/4 cucumber
Avocado
2 garlic cloves
1 tbs mayo
Juice of small lemon
15ml water
Seasoning
1tbs sour cream
Tenderstem broccoli
1 stick celery
Oil for frying

Season the chicken and fry with garlic until cooked through, be careful not to burn the garlic. We used a lemon and herb mill to season. We also fried in rapeseed oil as it is low in saturated fat












At the same time boil some water for the broccoli. Wash and chop the vegetables.




Now prepare the dressing: mix together mayo, lemon juice, sour cream, water, salt and black pepper. If it is too thick add more water or of it's too thin add more mayo.
Assemble the salad and then add the chicken and broccoli. Drizzle the salad with the dressing then crumble the cheese and add on top. Add croutons if you want!
















So there you go a filling and low cal dinner to prepare you for in the words of my grandma 'bikini season'. Hope you enjoy!!!
